Have you ever started to bake a cake or recipe that required eggs only to find out you'd forgot to pick them up at the store? I have. That's when I decided to find something to replace the egg so I could complete the process. You may be surprised to know there are things you can use that you already have on hand, as I was. The best part was I got to enjoy the cake without losing the flavor or taste. My go-to egg replacement is flaxseed and applesauce. You can also use a banana to replace eggs as a binder in your favorite recipe. The choice is totally up to you. Cheers!
Is there anyone out there like me who struggles when it comes to converting baking ingredients and measurements? Math was not my best or favorite subject, by somehow I manage to make it work. On those rare occasions when I can't get ahold of my genius daughter to ask for her help, I improvise. Luckily for me there isn't anything you can't learn how to do by Google "ing" it. Cheers

Not only does it save me time, but is taste so good that my customers can hardly tell the difference. I decided to change that this year and found this full proof recipe on youtube. I’ve shared with you a little about my story but here is where I want to share with you some of the amazing teacakes stories I hear when I’m out selling teacakes. Here’s a recent story that aligns with our mission statement to bring delicious goodness to you one Teacake at a time. Recently I dropped by my friend and Mary Kay reps house to pick up some makeup I’d ordered, this much beauty is so hard to maintain. And when I arrived she asked me to come inside and meet her mother, a much older woman and one of her sisters. As we completed the introductions I noticed that her mother was standing in front of a kitchen aide mixer and her younger sibling, who looked to be in her mid forties said she wanted her mother to start making the cake so she could have the spoon. It seems that she was the one sister who was adamant about licking the spoon when her mother finished making the cakes. Something she had carried with her throughout her childhood and into her later years. After laughing, I casually mentioned that I made teacakes and asked if she would like me to get some out of my car for her? Her entire face and demeanor instantly changed as she began to tell me how her mother made teacakes for her and her siblings when she was younger and she told me the story of how when her dad would put his teacakes in a pillowcase and hang them from the ceiling light so kids would not be able to reach or eat them. She went on to say, that he would nail the pillow case to the ceiling and he always knew if someone went into the pillowcase and ate the teacakes. She went on to say she used to have a recipe for teacakes and often thought about making them. I went to the car and pulled out a pack of six almond teacakes and took them inside for her to have. She immediately opened the pack and bit one- the look on her face was pure delight. OMG she said they taste just like I remember, you must give me the recipe. Sure I said, and told her what I tell everyone, I found the recipe of Facebook about two Christmases ago and that how I started making teacakes again. of course I’ve added my own twist and flare and swag to the original recipe. I’m always amazed by some of the teacake stores I’ve heard, but this one clearly take the cake- teacake that is. Until next time tea you later. |
